First, prepare the red velvet box cake mix according to the packaging instructions to create the red velvet cake. Once cooled, crumble 1 cup of the cake to create the red velvet cake crumbs. In a large bowl, combine the sweetened condensed milk, vanilla extract, and cocoa powder. Mix thoroughly. Add the red food coloring and mix again until well combined. Stir in the red velvet cake crumbs. In a separate bowl, blend the heavy cream until soft peaks form. Gently fold the whipped heavy cream into the sweetened condensed milk mixture until no streaks remain. Pour the mixture into a freezer-safe pan. Freeze for at least six hours, or preferably overnight, until solid.
