Sweet Potato Pound Cake

What you need

tsp cinnamon

tsp ground nutmeg

tsp baking soda

tsp baking powder
cup ap flour

cup milk

tsp ground ginger

unsalted butter

tsp salt

cup sugar
cup sweet potato puree
egg

cup light-brown sugar
Instructions
In a large bowl, sift together the AP flour, baking soda, baking powder, and salt. With a mixer, cream the softened butter and cream cheese for roughly 3 minutes. Add both types of sugar and continue to cream for 10 minutes. Stir in the smoothly blended sweet potatoes until just combined. Add the eggs one at a time, mixing well after each addition before adding the next. Alternate adding the milk and the sifted flour mixture to the batter, starting and ending with the flour. You can add the cinnamon, nutmeg, and ginger spices on the first round of flour and any vanilla (if using) on the first round of milk. Pour the batter into a prepared bundt or loaf pan. Bake at 325°F for 1 hour 20 minutes, or until a toothpick inserted into the center comes out clean.View original recipe
